Let me start with an explanation - the reason my mince pies look a bit peculiar is that I have totally lost my bun tin, I know it must be somewhere but goodness knows where! So I have had to make them in madelaine moulds, which I have to say makes them look mighty strange, but having just eaten one hot out of the oven I confirm that no matter how odd they look they still taste delicious!!
The recipe is simple :
12oz/350g Plain (all purpose) flour
4oz/100g caster (superfine) sugar
1lb/450g jar mincemeat
Sieve the flour into a bowl, stir in the sugar, and then rub in the butter until it looks like breadcrumbs. Once this stage is reached, start kneading it together into one ball and chill in the fridge for half an hour.
Next roll half the mixture out and cut to fit your tins, spoon in a dollop of mixture and then roll out the rest of the mix to make tops. I like to put a christmas shape or heart. Bake at 180c/360'F for 15-20 Min's.
